Homemade Cauliflower Soup

Been a little busy of late, hence not many soups.  But looking through some old Health & Fitness magazines came across the easiest soup ever.  And up to this point, the tastiest, well according to my hubby who last night said, 'that cauliflower soup was bloody gorgeous!' 
 
 


This soup is a healing bowl of soup as cauliflower is full of antioxidants and also has high anti-inflammatory and anti-cancer properties.  It is very low in calories (100g is only 26 calories) so perfect for someone who is watching their weight.  Cauliflower also contains high levels of Vitamin K and omega 3 fatty acids which may help decrease inflammation in the body.  It is an excellent source of Vitamin C (antioxidant to fight free radical damage, necessary for absorption of iron, boosts immunity and fights cancer), B Vitamin group namely, pantothenic acid (B5), pyridoxine (B6) thiamin (B1) and niacin (B3)  These vitamins being essential for many functions as well as helping us convert food into energy.  Cauliflower also provides us with the minerals calcium, copper, iron, manganese, magnesium, zinc and electrolytes sodium and potassium. 

Who'd of thought you get all this from the humble cauliflower!

Ingredients
1 medium potato, scrubbed or peeled and cut into pieces
1 medium to large white onion, chopped roughly
1 medium cauliflower, broken into florets (I removed the green leaves, as they are a little bitter)
750ml of chicken or vegetable stock (I used veg stock)
2 x tablespoons of half fat creme fraiche
3 x tablespoons ground almonds (I bought a small packet (50g) whole almonds and crushed them roughly in my mortar and pestel)
Chives to garnish with half the almond mix

Dead easy, literally threw my potato, onion and cauliflower in my soup maker, added the stock and brought to the boil.  Then simmered for around 25 minutes, blending a couple of times.  Tasted then seasoned.  Continued to blend / blitz until happy with consistency.  Added the half fat creme fraiche and half the almonds.  Blitzed again, then served quickly in warm bowls with the rest of the almonds and scissored chives.  Stunning, so good, made enough to have another bowl this evening before tea:)
